The grapes for Spalletti Chianti come from the Folonari family estate of TorCalvano in Montepulciano, from vineyards classified for Chianti Classico DOCG. This production is supplemented by other vineyards within the Chianti zone. Yields are kept low to encourage complexity and concentration in aromas and flavors. Fermentation
