Vinification: Whole bunches are harvested by hand, then pressed in autoclave for free run juice only. Spontaneous fermentation on skins and stems until 1 3 done, then finished in pressure tank to keep the CO2 in 10 days total. Aged in stainless steel, unfined, unfiltered, no added SO2.
