Viticulture: Certified organic (Qualisud, 2010), Bordelaise pruning. Vinification: De stemmed, uncrushed, ambient yeast fermentation, short pumpovers to limit the tannin structure, aged for 4 6 months in stainless steel tank, minimal (if any) added SO2 after vinification.
