Before settling back in his familys home village of Chzy sur Marne, Gauditiabois cut his teeth as an apprentice under Jacques Selosse in Avize. Hes taken a similarly rigorous approach back in the Marne: organic farming in the vineyards, and a natural, vinous approach in the cellarusing indigenous yeasts, native fermentations, little or no added
