Vinification & Aging: After 9 months in stainless steal containers (without malolactic fermentation)

the walnuts are strained and the spirit sweetened before a nine-month resting period in stainless steel and glass demijohns that are placed near the windows of the distillery to sun-mature

2021 Cabecas do Reguengo Vira Cabecas , Alentejo, Portugal Ludes and with a mineral-drenchedField blend from 5 different very old vineyards (about 12 different grape varieties). Natural fermentation and aging for 20 months in semi new oak barrels (1000 liters). Malolactic done. Bottled on 25th May 2021.
